Alice Waters restaurant instilled in me the standard of using locally grown seasonal ingredients. North Carolina farmers markets hold their own against any place I have ever lived. This time of year is especially extraordinary. The farmers are glorious and buying from them and cooking with their foods enables me to celebrate my life here. I also celebrate the changing seasons and my relationship to you, my guests at Ollie's. Presently, 3 times a week, I shop at the Triad Farmers Market at Colfax on I-40 East. I buy vegetables and fruits for a lot of my recipes. An example is the peppers for roasting my goat cheese tarts. Also, onions, potatoes, zucchini, tomatoes and beans for vegetable soups. The availability of a huge variety of the crispest apples for my pies and strudels is astounding. The pie pumpkins serve first as decoration and then as I need them, to roast for my pumpkin custard pie and pumpkin cheesecake. Eggs and cheese are purchased from local farm producers. I want you to know that at Ollie's you are buying only the best ingredients. We are joyfully supporting our local farmers, artisan producers and in turn the local economy.
